Job Purpose: The Banqueting Sous Chef is a pivotal member of the culinary leadership team, responsible for supporting the Banqueting Head Chef/Executive Head Chef in all aspects of banqueting kitchen operations.
This role ensures the consistent delivery of high-quality food, efficient kitchen management, and outstanding guest experiences for weddings, gala dinners, conferences, and private functions.
The Sous Chef will also play a key role in mentoring and developing kitchen staff, maintaining operational standards, and contributing to menu innovation and planning.
Key Responsibilities: Assist the Banqueting Head Chef/Executive Head Chef in planning, coordinating, and executing all banqueting operations.
Ensure all events are delivered on time, within budget, and to Hanly Castle standards.
Supervise and allocate kitchen duties, ensuring optimal staffing and workflow efficiency.
Maintain high standards of food quality, presentation, and hygiene in compliance with HACCP and internal policies.
Monitor kitchen equipment, cleanliness, and maintenance requirements.
Lead, train, and inspire the banqueting kitchen team, fostering a culture of excellence, professionalism, and collaboration.
Mentor junior chefs and kitchen staff, supporting skills development and career progression.
Conduct regular team briefings and performance check-ins to align staff with operational goals.
Support menu planning and development in collaboration with the Banqueting Head Chef/Executive Head Chef.
Oversee portion control, recipe adherence, and consistency across all dishes.
Assist in ordering, stock control, and managing inventory levels to minimise waste.
Ensure all dietary requirements, allergies, and special requests are accommodated accurately.
Ensure compliance with all food safety, hygiene, and health safety regulations.
Conduct regular kitchen inspections and maintain records of compliance checks.
Report any operational risks or incidents promptly to the Banqueting Head Chef/Executive Head Chef or management team.
Work closely with the Wedding Sales teams to understand event requirements.
Provide hands-on support during events, including cooking, plating, and supervising service.
