Medialuna Croissanterie is a wholesale bakery supplying above 130 shops per day and making above croissants per week. We are looking for a full time Pastry Chef team leader and Production Manager, 5 days per week with exception to holiday cover, who would like to join our incredible team and who is passionate about bakery.Purpose of the job: to ensure the day to day operations are carried out in line with the company standards and the customers demands, providing quality service, and following instructions given.Qualifications:Minimum 3 years of experience as Baker or Pastry Chef, experience with laminated dough, sourdough bread, oven and proofer.Control daily productionCollaborativeEager to learnProactiveFriendlyThe Duties required by the position such as:Attending one day per week Leadership Team meetingsSetting a positive tone and strong work ethic, leading by exampleTraining and educating the team on Medialuna Croissanterie's process and policiesCommunicating information and any changes to the teamManaging quantities to be baked, ensuring we have stock but also keeping waste to a minimumSetting the menu for pastry offerings, keeping a balance of maintaining/innovating pastry offeringsCost out offerings to ensure margins are correctFollowing trends to remain up to date on popular items/ideasTrying new recipes and tweaking as needed, without fear of failureDiscarding any pastry that does not meet our high quality standardsExecuting large custom ordersExecuting occasional pre-order specialties (i.e. Halloween, Mince Pie)Managing the schedule for the teamKeeping responsible areas clean and presentable, modifying checklists as needed to maintain a clean environment.
