Chef de Partie The Mercantile Hotel The Mercantile Hotel is seeking an experienced and motivated Chef de Partie to join our esteemed and dynamic kitchen team. Role & Responsibilities Support the Head Chef and Sous Chef in the day to day running of your designated section Prepare, cook and present dishes to the highest standard during service Take full responsibility for your section, ensuring it is always organised, well stocked and ready for service Assist with menu preparation, including mise en place and contributing ideas for daily specials Ensure accurate portion control, consistent quality and timely delivery of dishes Monitor stock levels within your section, report shortages and assist with stock rotation to reduce waste Follow all HACCP procedures, food safety guidelines and kitchen hygiene standards Train, guide and support junior chefs and kitchen assistants working within your section Communicate clearly with the wider kitchen team to ensure smooth and efficient service Assist in receiving deliveries, checking quality and ensuring correct storage Work closely with the team during busy service periods with strong teamwork and attention to detail Follow company policies regarding Fire, Health and Safety, Food Hygiene and Customer Care Carry out any additional duties as directed by management (this list is not exhaustive) Requirements Fluent English Valid working visa Minimum 2 years experience in a similar role Recognised qualification and experience in managing and implementing a HACCP system Excellent communication and interpersonal skills Strong drive and enthusiasm to achieve excellence Benefits Very competitive remuneration FLYEfit discounted gym membership Career progression opportunities Ongoing training and development Staff discount card Staff awards Travel and Bike to Work tax-saving schemes Due to the high volume of applications, only candidates shortlisted for this position will be contacted.
