Job Summary
Prepare and oversee bulk cooking of South and North Indian cuisine for restaurants and weddings, ensuring quality, safety, and client satisfaction. Train staff and manage kitchen operations to meet menu and dietary requirements.
Responsibilities
Prepare South Indian and North Indian cuisine in bulk for restaurants, weddings, and catering events following standard recipes
Develop and recommend new dishes for South and North Indian cuisine menus
Cook vegetarian and non-vegetarian dishes, including Indian desserts, snacks, and Tandoori specialties
Extend recipes to meet facility population requirements and dietary needs
Prepare meat, fish, poultry, vegetables, soups, gravies, sauces, and desserts for balanced, healthy diets
Use varied kitchen equipment to produce large quantities of food efficiently and safely
Prepare and post daily work assignment sheets based on menu and staff duty roster
Assign cooking and food preparation tasks to kitchen staff and instruct them on proper techniques
Orient and train program participants or workers in food preparation and kitchen operations
Develop and implement local procedures for receipt, checking, and issuing of food and non-food items
Monitor food preparation to ensure adherence to quality, sanitation, and safety standards
Display effective communication and interpersonal skills to support the Food Service Manager and maintain good client relations
Provide advice, counsel, and instruction to kitchen staff and handle disciplinary measures within delegated authority

Required competencies and certifications
Minimum five years’ experience in preparing South Indian and North Indian cuisine for bulk cooking
Preferred competencies and qualifications
Experience in catering for weddings and large occasions
