Job Description

The Chef de Partie will be responsible for preparing and cooking high-quality Asian dishes in accordance with Lana’s recipes and presentation standards. The role involves working closely with the Head Chef and kitchen team to ensure efficient kitchen operations, food safety compliance, and exceptional taste and consistency across all dishes.


Key Duties and Responsibilities

* Prepare, cook, and present authentic Asian dishes such as stir-fries, curries, noodles, soups, and rice dishes according to established recipes.
* Assist in developing and improving menu items in collaboration with the Head Chef.
* Ensure that all food is prepared and served to Lana’s quality, portion, and presentation standards.
* Maintain a clean, safe, and organised kitchen environment in compliance with HACCP and food safety regulations.
* Monitor and manage inventory and stock rotation to minimise waste.
* Support the training and supervision of junior kitchen staff.
* Ensure all kitchen equipment is properly used, cleaned, and maintained.
* Work efficiently in a fast-paced environment while maintaining attention to detail and consistency.


Qualifications and Experience

* Minimum of 2–3 years’ experience as a Chef de Partie or in a similar role within an Asian or high-volume restaurant.
* Proven ability to prepare and cook authentic Asian cuisine (Thai, Japanese, Chinese, or Malaysian experience preferred).
* Strong understanding of Asian ingredients, spices, and cooking techniques such as wok cooking and stir-frying.
* Knowledge of food safety, hygiene, and allergen control.
* Culinary qualification or equivalent professional experience desirable.
* Ability to work flexible hours, including evenings and weekends.
