About the Role:
We are seeking an experienced, creative and hands-on Senior Sous-Chef to join our kitchen leadership team. Reporting to the Head Chef, you will play a key role in daily kitchen operations, menu development and maintaining high standards of food quality, hygiene and service.
Key responsibilities:
* Support the Head Chef in leading the full kitchen operation and acting as deputy when required.
* Play a key role in menu development by shaping concepts, conducting tastings, and implementing seasonal updates, leveraging a keen understanding of culinary trends.
* Ensure menus are creatively balanced, operationally efficient and margin-driven.
* Collaborate hands-on with kitchen team to identify and introduce new culinary techniques that enhance overall food quality.
* Actively participate in tastings to maintain a consistent and high level of flavour in all prepared dishes.
* Engage in quality improvement projects to stay innovative and maintain high standards.
* Cost menus accurately, monitor GP targets and identify opportunities to improve profitability.
* Oversee ordering, supplier relationships, stock control, and waste reduction
* Maintain exceptional standards of food quality and presentation.
* Lead, mentor, and develop the kitchen team, fostering a calm, professional kitchen culture.
* Ensure full compliance with food safety and hygiene.
* Collaborate closely with front-of-house and management to align menus with the overall guest experience.
* Maintain the highest standards of food quality, presentation and consistency
* Coordinate the kitchen team (Sous/Chef de Partie / Commis / kitchen staff) including scheduling and training where needed.
* Ensure appropriate supervision of employees at all times, maintaining a strong presence and leading by example.
* Promote a positive, inclusive team culture that encourages collaboration, unity and optimism.
Candidate Requirements:
* Proven experience as a Senior Sous Chef, or a strong Sous Chef ready to step into a senior leadership role.
* Strong knowledge of kitchen operations, food safety, and HACCP.
* Ability to lead a team and support staff training and development.
* Passion for creating exceptional food with fresh, seasonal ingredients.
* Excellent communication skills, with the ability to work well under pressure.
* A positive attitude with a commitment to high standards and continuous improvement.
* Strong communication and leadership skills, with the ability to manage and mentor a diverse team.
* Passion for sustainable practices and waste reduction.
* Relevant Culinary Qualification.
* 3+ years Senior Supervision experience in a busy 4/5* hotel kitchen.
* 5+ years' overall kitchen experience.
* Attention to detail with a commitment to culinary excellence and customer experience.
* Fluent written and spoken English
* Passion for sustainable practices and waste reduction.
* Positive disposition with an ability to remain calm under pressure
