We have an exciting opportunity for a pastry chef to join our growing team at Scéal Bakery, based on the seafront in Greystones. Job Description

As a pastry chef, you'll master laminated dough techniques, creating everything from Irish butter croissants to seasonal pastries. You'll work with high-quality local ingredients, applying traditional methods to achieve perfect flakiness, structure, and flavor.

* Laminating Dough: Expertly layering butter and dough for flaky pastries.
* Shaping & Proofing: Rolling, cutting, and shaping pastries with precision for consistency and quality.
* Baking: Managing oven temperatures and baking times for optimal results.
* Quality Control: Ensuring each pastry meets artisan standards in texture, taste, and presentation.
* Time Management: Maintaining an efficient schedule for early morning bakes and stock replenishment.
* Recipe Development: Innovating seasonal flavors and pastry offerings while aligning with the Scéal ethos.
* Ingredient Sourcing & Prep: Using high-quality, local ingredients and preparing fillings, creams, and glazes from scratch.
* Cleaning & Maintenance: Keeping the workspace organized, clean, and compliant with food safety regulations, including HACCP.
* Experimentation & Creativity: Developing new sourdough variations, seasonal specials, and pastries.
* Team Collaboration: Working closely with fellow bakers to ensure efficiency and consistency.
* Reporting: Reporting to the Bakery Manager.
* Safety Procedures: Following safety protocols when handling heavy items.


Applicant Requirements

* Experience with laminated and enriched doughs.
* Experience in a professional kitchen environment.
* Understanding of fermentation processes.
* Proficiency in Excel, baker's percentages, and formulas.
* Ability to work cleanly and efficiently.
* Capability to thrive in a fast-paced environment.
* Problem-solving skills and keen attention to detail.
* Teamwork and effective communication skills.
* Motivated to improve and learn new skills.
* Positive ambassador for our brand and values.
* Comfortable working in an open kitchen.
* Strong knowledge of HACCP regulations.
