An exciting opportunity for the right candidate. Trinity Care, a leading nursing home group, is recruiting a full‑time Chef Manager to join Castlemanor Nursing Home, a homely facility based in Co, Cavan. Residents are at the heart of every decision we make.
Key Responsibilities
* Produce and present food to high standards and specifications, efficiently using all resources.
* Ensure consistent compliance with all aspects of the HACCP system and implement new developments or recommendations as required.
* Preparation of both raw and cooked food.
* Cooking and presentation of food in accordance with specific dietary requirements.
* Decanting, portioning and packing of both raw and cooked food.
* Manage food costs, disposable and chemical costs, ordering, stock rotation and allocation of all foodstuffs and D&C, minimizing waste.
* Labelling, chilling and storage of food in accordance with the Food Safety Policy.
* Communicate regularly with Residents, adhere to their specific food plans, and deal with their needs as required.
* Keep the D.O.N. and Group Catering Manager informed of any issues in a timely manner.
* Prepare a minimum of three 4‑week cycle menus and allergen listings per year, adhering to the Nutritionist's report.
* Regenerate and serve food.
* Maintain accurate recording of HACCP records, training and induction, payroll within budget, and additional hours recorded on T.M.S.
* Maintain cleanliness and good order of assigned area and associated areas to the highest possible standard.
* Ensure efficient and economical use of materials and equipment.
* Adhere to specifications, standards and procedures while at work.
* Consistently practice all hygiene, cook‑chill and health and safety procedures.
* Report mechanical defects and needs for repairs.
* Ensure maximum security of area of assignment and all equipment and supplies.
* Effectively manage and develop your team.
* Report immediately any accidents, fire, stock loss, damage, allegations, unfit food and take appropriate action.
* Provide assistance and advice to staff in packing/plating areas on portion size.
* Monthly stock taking and preparation of monthly CPL and stock reports.
* Check quality of goods received as per specification.
* Liaise with user groups on compilation of menus and provision of services.
* Participate in training courses as and when required.
* Be aware of modern developments in the industry and assist in introduction of changes in food trends.
* Achieve consistent 'best in the class' results in internal quarterly audits (E.H.O., E.I.Q.A., H.I.Q.A.) and external audits (e.g., Cater Care Ltd).
* Attend monthly Catering/DON meetings, bi‑monthly Group Chef Meetings and Group Catering Manager meetings.
* Develop and seek ways to improve your skills and lead the Kitchen Team.
* Any other duties relevant to the post as allocated by the Group Catering Manager.
