Job Description
As Sous Chef with Khana Restaurants Ltd., you will support the Head Chef in managing all kitchen operations and sections throughout service, lead the kitchen brigade in the Head Chef's absence, maintain consistent quality across all Indian dishes, collaborate on menu development, supervise and develop the kitchen team, ensure compliance with food safety, HACCP and allergen regulations, oversee stock control and waste reduction, and drive a positive kitchen culture.
Responsibilities

Support the Head Chef in managing all kitchen operations and sections throughout service.
Lead the kitchen brigade in the Head Chef's absence, taking full operational responsibility.
Maintain consistent quality and authenticity across all Indian dishes leaving the kitchen.
Collaborate with the Head Chef on menu development, new dishes and seasonal specials.
Supervise, coach and develop the full kitchen team including Chef de Parties and commis chefs.
Lead pre-service briefings and manage team performance and development.
Ensure full compliance with food safety, HACCP and allergen regulations across all sections.
Oversee stock control, ordering and waste reduction to support GP targets.
Drive a positive kitchen culture with high standards and strong team morale.

Qualifications

Minimum 5 years' experience in a professional kitchen.
Strong expertise in Indian cuisine including regional dishes, spice blends and specialist techniques.
Proven ability to lead and develop a kitchen team in a busy service environment.
Sound knowledge of food hygiene legislation, HACCP and allergen management.
Experience with menu development and recipe standardisation.
Calm under pressure with excellent organisational and communication skills.
Flexible availability including evenings, weekends and bank holidays.
Culinary qualification desirable but not essential.
