Job Title:Head Pastry ChefReports to:Executive ChefDate:2026Job Summary:The Pastry Chef plays a pivotal role in delivering an exceptional experience for the guests' at The Grace Westport Estate. The Pastry Chef is responsible for preparing, producing, and presenting high-quality pastries, desserts, breads, and baked goods for the hotel, including the restaurant, banqueting, room service, and special events while delivering consistent high-quality dishes that align with the hotel's culinary standards and commitment to luxury hospitality.Key ResponsibilitiesPrepare and produce a wide range of pastries, desserts, breads, cakes, and plated dessertsDesign and update dessert menus in line with seasonal ingredients and hotel conceptsEnsure consistent quality, taste, and presentation across all pastry itemsManage daily mise en place and production schedulesSupervise and train commis pastry chefs and kitchen assistants (if applicable)Maintain cleanliness and organisation of the pastry kitchenEnsure compliance with HACCP, food safety, and hygiene regulationsControl food costs, minimise waste, and manage stock levelsCollaborate with the Executive Chef and kitchen team for events, banquets, and promotionsAssist with ordering ingredients and maintaining supplier standardsThis job description is not intended to be either prescriptive or exhaustive, it is issued as a framework to outline main areas of responsibility at the time of writing.Required Experience & SkillsProfessional qualification in Pastry Arts or Culinary Arts preferredProven experience as a Pastry Chef or Pastry Cook, ideally in a hotel or high-volume kitchenStrong knowledge of baking techniques, and dessert platingCreativity with strong attention to detailAbility to work early mornings, weekends, and holidaysGood time management and organisational skillsTeam player with a positive, flexible attitudeEligibility to work in Ireland.ExperienceMinimum of 2-3 years' experience in a professional pastry roleHotel or fine-dining experience an advantageThe Grace is an equal opportunity employer.
