The Menlo Park Hotel Galway is recruiting a Junior Sous Chef to join our team. The junior Sous chef reports to the Head Chef and Sous Chef and will supervise the junior chefs. Ideally we are looking for a chef who has experience in a 4 star hotel, a passion for producing quality food and is looking for their next senior role.
Main tasks and Responsibilities
 * Produce high quality food with excellent presentation
 * To have an excellent knowledge of and to ensure that all HACCP and kitchen hygiene procedures are consistent and monitored.
 * To work with the senior kitchen management to suggest, cost and develop new menu items for the restaurant and bistro and function menus.
 * To manage each section of the kitchen to a high and consistent standard and be flexible to work on all sections when and where required.
 * To upskill the junior team members of the kitchen by observing, training and mentoring
 * To ensure that mise en place is up to date and is ready in time for service to ensure quality and presentation of menu items.
 * To support the head chef and Sous chef in the day to day management of the kitchen to ensure that targets are met especially in relation to quality, food cost and service excellence.
 * To ensure good cost control and participate in stock taking if required.
Excellent written and spoken English is required and applicants need to be legally entitled to work full time in Ireland
