Medialuna Croissanterie is a wholesale bakery supplying above 130 shops per day and making above croissants per week. We are looking for a full time Head Baker Chef/Pastry Chef and Production Manager, 4/5 days per week with exception to holiday cover, who would like to join our incredible team and who is passionate about bakery. Schedule time: 18pm to 3am.
Purpose of the job: to ensure the day to day operations are carried out in line with the company standards and the customers demands, providing quality service, and following instructions given.
Qualifications:
* Minimum 3 years of experience as Head Baker or Head Pastry Chef, experience with laminated dough, sourdough bread, oven and proofer.

The Duties required by the position such as:
* Attending one day per week Leadership Team meetings
* Setting a positive tone and strong work ethic, leading by example
* Training and educating the team on Medialuna Croissanterie's process and policies
* Communicating information and any changes to the team
* Managing quantities to be baked, ensuring we have stock but also keeping waste to a minimum
* Setting the menu for pastry offerings, keeping a balance of maintaining/innovating pastry offerings
* Cost out offerings to ensure margins are correct
* Following trends to remain up to date on popular items/ideas
* Trying new recipes and tweaking as needed, without fear of failure
* Discarding any pastry that does not meet our high quality standards
* Executing large custom orders
* Executing occasional pre-order specialties (i.e. Halloween, Mince Pie)
* Managing the schedule for the team
* Keeping responsible areas clean and presentable, modifying checklists as needed to maintain a clean environment. Keeping the Cold Room clean and orderly.
* Assessing what needs accomplished, then prioritize and delegate
* Keeping the team motivated and working, checking for quality and thoroughness
* Noticing if equipment operates properly and report any maintenance needs
* Complying with health and safety regulations
* Supervising and coordinating all pastry and dessert preparation and presentation.
* Monitoring stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget.
* Checking quality of material and condition of equipment and devices used for cooking.
* Assistings in determining how food should be presented and creating decorative food displays.
* Ability to develop, design, or create new ideas and items for Pastry Kitchen.
