Responsible for leading and executing the breakfast service, this role ensures the preparation and presentation of high-quality dishes that align with the estate's culinary standards and commitment to refined hospitality.The Breakfast Chef oversees all aspects of morning kitchen operations, from mise en place and menu execution to service flow, hygiene, and section organisation, ensuring a seamless and elevated breakfast offering for every guest.Key ResponsibilitiesLead and manage the breakfast service, ensuring dishes are prepared, cooked, and presented to the highest standard and within service timelines.Follow established recipes, plating guidelines, and quality benchmarks for consistency and excellence.Check the quality, temperature, and presentation of all dishes before leaving the pass.Prepare mise en place for breakfast and early service operations, ensuring readiness for each shift.Supervise, train, and mentor junior kitchen staff assigned to the breakfast section.Support the wider culinary team in transitions from breakfast to lunch or event service as required.Coordinate with front-of-house and kitchen colleagues to ensure timely service and smooth communication during busy breakfast periods.Maintain accurate production levels based on occupancy forecasts and reservations.Monitor section inventory, ensuring freshness, availability, and proper stock rotation.Assist in ordering and receiving deliveries, checking quality and storage compliance.Maintain strict hygiene, food safety, and HACCP standards across all operations.Ensure cleanliness and organisation of all work areas, equipment, and storage spaces.Adhere to estate policies and safety procedures, reporting any maintenance or compliance issues promptly.Contribute ideas for breakfast menu enhancements, seasonal updates, and presentation refinement.Support testing and implementation of new dishes in collaboration with the Head Chef.This job description is not intended to be either prescriptive or exhaustive, it is issued as a framework to outline main areas of responsibility at the time of writing.Required Experience & SkillsProven experience in a breakfast or hot kitchen role within a luxury or high-volume hospitality environment.Strong technical cooking skills, particularly with eggs, hot buffet items, and a la carte breakfast preparation.Excellent organisational and time-management abilities, with a proactive approach to service readiness.Strong understanding of HACCP, food hygiene, and kitchen safety standards.Ability to lead a small team and work independently during early shifts.Passion for culinary excellence and guest satisfaction.Eligibility to work in Ireland.The Grace Westport Estate is an equal opportunity employer.
