Sales & Reservations Manager for - FIRE Steakhouse & SOLE Seafood & Grill – Dublin

Role Overview
The Sales & Reservations Manager will play a pivotal role in driving revenue, managing demand, and maximising covers across two of Dublin's busiest and most prestigious restaurants - FIRE Steakhouse & Bar and SOLE Seafood & Grill.
This is a hands-on management role combining strategic sales activity with day-to-day reservations management, team development, and relationship building across the luxury, corporate, and private dining markets.
Key Responsibilities
Sales & Revenue Performance
Drive proactive sales activity to generate new business and grow existing accounts across both restaurants
Ensure weekly and monthly revenue and cover forecasts are achieved
Analyze sales performance including cover trends, conversion rates, lead times, and year-on-year comparisons
Prepare and present monthly and ad-hoc sales performance reports
Conduct competitor and market analysis to inform pricing, forecasting, and sales strategy
Maintain a strong awareness of domestic and international market trends
Group Sales & Private Dining
Manage and develop relationships with luxury travel agents, DMCs, corporate clients, and key partners
Actively drive private dining and group bookings across FIRE and SOLE
Represent FIRE & SOLE at networking events and industry functions, establishing key relationships in line with the company's sales strategy
Provide timely, accurate, and competitive quotes for all group and private dining enquiries, maintaining maximum profitability in line with brand pricing structures
Manage the full sales cycle: enquiries, quoting, follow-up, site visits, confirmations, invoicing, deposits, and final payments
Work closely with Operations and Culinary teams to deliver bespoke menus and tailored event experiences if required
Reservations Strategy & Systems
Oversee all availability planning, table plans, floor plans, special dates, tags, and configuration on OpenTable for both restaurants
Ensure correct pacing, timings, and booking controls are implemented to maximise revenue and guest experience
Monitor and optimise reservations strategy across peak and off-peak trading periods
Team Leadership & Development
Lead, manage, and support the Sales & Reservations team across both restaurants
Provide ongoing training, coaching, and development to new and existing team members
Support the team with time management, workload planning, and sales best practices
Conduct regular one-to-one meetings, performance reviews, and coaching sessions
Roster the Sales & Reservations team, ensuring full coverage across all required shifts
Communication & Collaboration
Work closely with the Director of Sales & Marketing and the wider Sales & Marketing team to develop and implement sales strategies as a team
Attend all internal sales meetings, performance reviews, and relevant operational or communication meetings
Maintain clear, consistent communication with Operations and Culinary teams to ensure seamless delivery of group bookings and events
Key Skills & Experience
Minimum 2+ years in a Sales & Reservations role within a high-volume, premium hospitality environment is essential
Prior experience managing a team of 5+ and/or strong leadership skills is essential
Strong understanding of group sales, private dining, and corporate business in the Dublin market
Experience using OpenTable or similar reservations platforms
Excellent organisational, analytical, and forecasting skills
Strong leadership and people management capabilities
Confident communicator with the ability to build long-term client relationships
Commercially driven with a hands-on, solutions-focused approach
A fiercely proactive and can-do attitude
Salary Package circa €60k (salary +KPI)
