Working closely with the Restaurant Manager, this role ensures exceptional guest experiences, operational excellence, and team development.Principle ResponsibilitiesGuest Experience ManagementSupport the delivery of personalised, memorable guest experiences in line with luxury service standards.Assist in handling guest concerns, special requests, and escalations with discretion and professionalism.Monitor guest feedback channels, escalating insights and ensuring timely resolution of service issues.Operational OversightCoordinate daily front-of-house operations including reservations, seating flow, and table management.Ensure dining areas maintain impeccable cleanliness, ambience, and presentation standards.Liaise with the kitchen team to enable smooth and efficient service transitions.Team Leadership & DevelopmentSupervise and train service staff including hosts, food and beverage assistant, and supervisors, ensuring performance excellence.Contribute to recruitment, onboarding, and training initiatives, fostering a culture of attentiveness and continuous learning.Lead pre-service briefings and support training on menu knowledge, service etiquette, and upselling techniques.Financial & Inventory ManagementAssist in managing labour costs, rota scheduling, and payroll alignment with budgetary targets.Support inventory management, ordering, and cost-control measures for front-of-house supplies.Provide input to revenue tracking and operational performance reporting.Menu & Beverage CoordinationStay current on menu offerings, wine pairings, and seasonal specials.Champion the roll-out of new menu items and promotional activations in collaboration with the wider F&B leadership team.Compliance & SafetyUphold compliance with food hygiene standards, liquor licensing regulations, and SOPs.Maintain accurate records for inspections, audits, and daily operational checklists.This job description is not intended to be either prescriptive or exhaustive, it is issued as a framework to outline main areas of responsibility at the time of writing.Required Experience & Skills2-3 years' experience in a supervisory or assistant management role within a luxury or fine dining environment.Strong leadership presence with excellent communication and guest service skills.Experience with reservation platforms and POS systems.Solid knowledge of wine and beverage service; professional certification advantageous.Fluent in English; additional languages a plus.Eligibility to work in Ireland.The Grace Westport Estate is an equal opportunity employer.
