Sous Chef - Laois Hotel - €42k - €45k We are seeking an experienced Sous Chef for our client in a thriving hotel in County Laois.

Responsibilities Support the Head Chef in overseeing all kitchen operations, including menu planning, food preparation, and staff supervision Lead and mentor the kitchen brigade, ensuring performance, productivity, and development Maintain presentation and quality standards across all food service points Ensure compliance with HACCP, hygiene, and food safety regulations Work with procurement and stock teams to control inventory and reduce waste Contribute creatively to menu development, including seasonal and dietary-specific dishes Uphold a safe and efficient working environment and enforce hotel standards Act as senior kitchen lead in the Head Chefs absence Requirements Culinary degree or relevant professional training Minimum 5 years experience in high-volume or fine dining kitchens At least 2 years in a Sous Chef or senior kitchen role Previous hotel kitchen experience is highly desirable Strong leadership and kitchen management skills Excellent understanding of budgeting, food costing, and inventory control High attention to detail and strong organisational skills Ability to thrive under pressure and lead during busy service periods Knowledge of current food trends and cooking innovations Rewards Competitive salary (commensurate with experience) Uniform and meals on duty Strong career development opportunities within a respected property BURAMB22 Skills: Food Preparation Service Training Staff Revenue Management Stock Controls Staff Scheduling Benefits: See Description
