As a key member of the Executive Committee, the Resort Executive Chef will hold
full strategic, operational, and financial responsibility
for all culinary activity across the resort. From fine dining and relaxed luxury experiences to grand banqueting, bespoke events, and future concepts, this role offers the platform to inspire, innovate, and elevate every aspect of the guest journey through food. This position calls for a leader who is equally comfortable setting long-term culinary vision and stepping into the kitchen to lead by example. The successful candidate will balance creativity with commercial discipline, champion local and seasonal produce, and build a culture where excellence, pride, and craftsmanship are felt on every plate.
The Role:
* Define and continually evolve the culinary vision and identity of Dromoland Castle Resort
* Create destination-worthy dining experiences that reflect the resort's heritage and sense of place
* Lead menu development, innovation, and new concept creation across all outlets
* Take full ownership of financial performance, including food cost, labour, budgeting, and profitability
* Provide visible, hands-on leadership during service, VIP occasions, and signature resort events
* Build, inspire, and develop a world-class culinary team, fostering talent, succession, and long-term careers
* Collaborate closely with Food & Beverage, Events, Sales, Finance, and senior leadership to deliver a seamless guest experience
* Uphold the highest standards of food safety, hygiene, and operational excellence
The Ideal Candidate:
* An accomplished Resort Executive Chef, Executive Chef, or equivalent senior culinary leader within a luxury hotel or resort
* Internationally experienced, with a strong understanding of multi-outlet, high-volume operations
* Commercially astute, with a proven ability to balance creativity and financial performance
* Experienced in leading pre-openings, refurbishments, or transformative culinary projects
* A natural leader who inspires teams through presence, passion, and professionalism
* Deeply committed to quality, craftsmanship, and developing the next generation of culinary talent
* Must have the legal right to work and reside in Ireland
