The Flying Enterprise Complex, one of Cork's most iconic hospitality destinations featuring a Bar, Restaurant, Courtyard, Deli and Event Spaces, is now recruiting an experienced General Manager to lead our bar operations and drive exceptional service standards.
This is a senior role within a large and growing hospitality group and requires a strong leader with excellent bar management experience.
About the Role
The General Manager will oversee the full bar function across the complex, ensuring smooth operations, consistent quality, team leadership, and profitability. This role focuses on high standards, strong controls, supplier relationships, staff management and an exceptional guest experience.
You will work closely with the senior leadership team to deliver operational excellence across all bar service points.
Key Responsibilities
* Manage the day-to-day operations of all bar areas across the complex
* Lead, train and motivate bar staff and supervisors
* Maintain exceptional service standards and a consistent customer experience
* Set, communicate and enforce service procedures, bar specs and presentation standards
* Oversee stock control, ordering and waste management
* Monitor bar GP, margins and cost controls in line with targets
* Manage relationships with suppliers, breweries and distributors
* Ensure full compliance with licensing laws, H&S, food safety and internal policies
* Oversee cash handling, float management and till reconciliation
* Support event delivery, function bars and seasonal activations
* Assist with roster planning, labour control and performance management
* Drive continuous improvement across service, training and product offering
* Maintain all bar equipment, cleanliness and presentation standards
* Report operational updates and KPIs to senior management
Requirements
* 3+ years in a bar management or bar operations role
* Strong product knowledge across beers, spirits, cocktails and stock management
* Excellent leadership skills with experience managing medium-to-large teams
* Strong understanding of cost control, GP margins and bar profitability
* Ability to work in a high-volume, fast-paced environment
* Excellent communication, organisation and problem-solving skills
* Knowledge of licensing laws and compliance requirements
* Ability to work evenings, weekends and peak trading periods
