Red D are recruiting a Head Chef for a leading four-star hotel in Limerick. This is a senior kitchen leadership role suited to an experienced Head Chef who enjoys being hands-on, leading from the front and running a disciplined, well-organised kitchen operation. This Head Chef role is full-time, five days over seven, with hours aligned to business levels. It will suit a Head Chef who is comfortable balancing food quality, people management and cost control in a busy hotel environment. The role The Head Chef will take full responsibility for the kitchen operation, team performance and food standards across all services. Key responsibilities include: Full management of all kitchen areas and personnel, ensuring consistent quality and presentation across all menu items Roster planning, labour cost control, supporting recruitment and overseeing productivity and performance Leading service during peak periods with a visible, hands-on presence Developing and refreshing menus in line with seasons, business needs and special events Training, coaching and developing kitchen team members to required standards Preparing, cooking and presenting dishes and sauces to a high, consistent quality Ensuring timely service and clear communication during service periods Building positive working relationships with suppliers, service teams and other departments Ensuring full HACCP compliance, documentation and hygiene standards at all times Driving reductions in food and energy waste and supporting sustainability initiatives Encouraging strong team spirit and a cohesive, professional kitchen culture Maintaining regular communication through meetings, briefings and handovers Reporting to the General Manager on performance, purchasing and operational requirements Overseeing induction and ongoing Training programmes for new and existing team members About you Proven experience as a Head Chef, or a Senior Sous Chef ready to step up, ideally within a four-star hotel environment HACCP trained with a strong focus on food safety and hygiene A genuine passion for delivering high-quality, consistent food Creative but commercially aware, with an understanding of cost control Strong leadership, communication and organisational skills Comfortable managing multiple priorities in a fast-paced operation Fluent written and spoken English Flexible to work varying shifts, five days over seven, including weekends Whats on offer A company culture that genuinely puts its people first Ongoing Training and development opportunities Contributory pension scheme Life insurance Staff meals Employee Assistance Programme Friends and family accommodation rates Bike to Work scheme Christmas savings scheme We can only consider candidates with full, unrestricted permission to live and work in the EU.
