We are now seeking an
exceptional Sous Chef
to join the opening team and play a key role in shaping the kitchen culture, standards, and culinary identity from day one.
The Role
As Sous Chef, you will work closely with the Head Chef to deliver outstanding Italian cuisine at the highest level. This is a hands-on leadership role, ideal for a chef who is passionate about Italian food, driven by quality, and excited by the challenge of launching a flagship restaurant.
You will be instrumental in:
* Maintaining consistency, precision, and excellence across all sections
* Leading and mentoring the kitchen team
* Upholding the Oliver Dunne Restaurants standards of food, service, and professionalism
Key Responsibilities
* Support the Head Chef in all day-to-day kitchen operations
* Deliver exceptional, authentic Italian dishes with consistency and attention to detail
* Lead, train, and inspire junior chefs and kitchen staff
* Ensure the highest standards of food quality, presentation, and taste
* Maintain strict food safety, hygiene, and HACCP standards
* Assist with menu development, tastings, and seasonal changes
* Manage stock control, ordering, waste reduction, and cost control
* Step into Head Chef responsibilities when required
The Ideal Candidate
* Proven experience as a Sous Chef or strong Senior Chef de Partie ready to step up
* Background in high-end or quality-driven Italian kitchens (fresh pasta, sauces, classic and modern Italian techniques)
* Passion for premium ingredients and authentic flavours
* Strong leadership skills with a calm, professional approach
* Excellent organisational and communication skills
