Excel Recruitment are seeking an experienced Chef Manager to lead food operations in a high-end food and beverage venue in North Dublin. This hands-on role suits a chef with strong leadership skills, excellent food knowledge, and experience managing compliant, high-volume kitchens.
The position is 5 days over 7, with mainly daytime hours and no late nights, offering an excellent work-life balance.

Responsibilities of the Chef Manager
9. Lead and manage day-to-day kitchen and food service operations across multiple outlets
10. Plan, cost, and deliver high-quality menus aligned with brand and customer expectations
11. Ensure consistently high standards of food quality, presentation, and service
12. Drive menu development, innovation, and seasonal changes
13. Manage food and labour costs in line with agreed budgets and KPIs
14. Oversee stock control, ordering, inventory management, and waste reduction
15. Ensure full compliance with food safety, health and safety, and HACCP standards
16. Train, mentor, and develop kitchen teams, supporting performance and engagement
17. Maintain audit-ready kitchens with full ownership of food safety documentation
18. Work closely with senior operations and front-of-house teams to deliver an exceptional guest experience
Requirements of the Chef Manager
19. Previous experience as a Chef Manager, Head Chef, or Senior Sous Chef in a high-volume food operation
20. Strong operational and people management skills
21. Proven experience managing food margins and cost control
22. Excellent knowledge of food safety systems, allergen compliance, and HACCP
23. Confident communicator with a collaborative leadership style
24. Passion for food quality and delivering a consistently high customer experience
25. Flexibility to work weekends as required
