We are currently recruiting for an enthusiastic and dedicated Chef de Partie to join the Kitchen team led by Executive Head Chef, Jonathan Keane. As a Chef de Partie, you will support the team during service to deliver high-quality food in line with The Red Carnation Hotels standards.

The Lodge at Ashford Castle is situated within the 350-acre estate of Ashford Castle, overlooking Lough Corrib. Built in 1865, it offers country house charm, fine dining at Wilde’s Restaurant, and a range of estate activities. Key responsibilities of the Chef de Partie include:
* Preparing and producing food for your section, following recipes and presentation standards.
* Managing the daily operations of your section and supervising staff.
* Coordinating with onsite functions and banquets, planning dishes accordingly, and managing stock levels.
* Planning your time efficiently to fulfill responsibilities.
* Maintaining good relationships with kitchen and restaurant staff.
* Staying updated with modern cooking trends and suggesting improvements or new dishes.
* Adhering to Food Hygiene and HACCP regulations and monitoring compliance among team members.
Ideal candidate should have:
* A formal qualification in Professional Chef/Culinary Skills.
* Experience at Demi Chef de Partie or Chef de Partie level in a 4 or 5-star kitchen.
* A passion for food and interest in Fine Dining.
* Excellent communication skills.
* Strong attention to detail.
* The ability to handle busy situations and manage workload effectively.
