The business operatesthree revenue centres:The Café (c.80% of revenue) a 400-seat, multi-floor, table-service operationRetail ShopEventsThis role hasfull responsibility for the Café, which is the commercial engine of the business, withexpected revenue of c.€5m in 2026.TheRetail and Events businesses remain under the responsibility of the Operations Manager, to whom this role reports.The RoleFull operational leadership of a 400-seat, two-floor, table-service café in a protected heritage building on Grafton StreetResponsibility for café performance within a multi-revenue hospitality business, working closely with the Operations Manager and peer leadersVisible, authoritative presence on the floor during service, leading pace, flow, service quality and recoveryDirect leadership of a large, diverse team (typically 50 – 80 people across seasons) with clear standards, structure and accountabilityOwnership of café labour control, productivity, cash handling, service execution and guest experienceLeadership through significant seasonal and daily volatility without erosion of standards or disciplineDelivery of agreed standards, plans and priorities set in collaboration with the Operations Manager and ownershipPractical input into marketing and growth initiatives as they affect the café operationAbout YouA proven Café GM / Restaurant Manager or senior hospitality operator with recent P&L responsibility at similar or greater scaleStrong background in high-volume, table-service or retail-led hospitality where guests are not captive and execution mattersComfortable leading large teams in complex, high-pressure environmentsCommercially literate, decisive and resilient, with a strong on-floor leadership styleWilling and able to enforce standards, address underperformance and take difficult decisionsExperienced operating within flagship, heritage or highly visible venuesThis isnot a step-up role.
