Role Overview
As Sous Chef in our luxury hotel, you will play a pivotal leadership role within the kitchen brigade, supporting the Executive Chef in delivering exceptional culinary experiences that reflect the highest standards of quality, creativity, and service. You will help oversee daily kitchen operations, maintain consistency across all food outlets, and uphold the hotel's reputation for excellence.
This opportunity comes with a high level of accommodation in a management house. 3 months resnt free and €55/week thereafetr including all utilities.
Key Responsibilities
* Support the Executive Chef in the day-to-day management of the kitchen operations
* Lead, train, and motivate the kitchen team, ensuring high performance and professional development
* Maintain exceptional food quality, presentation, and consistency across all menus
* Assist in menu planning, development, and seasonal updates using locally sourced Irish produce
* Ensure compliance with HACCP, Food Safety Authority of Ireland (FSAI) regulations, and company standards
* Monitor food costs, portion control, stock levels, and minimise waste
* Supervise food preparation, cooking, and service during busy periods
* Ensure cleanliness, organisation, and proper maintenance of all kitchen areas and equipment
* Step into the role of Executive Chef in their absence
Skills & Experience
* Minimum 2 years' experience as a Sous Chef or strong Junior Sous Chef in a luxury hotel, fine dining restaurant, or high-end resort
* This may suit a senior CDP looking to progress to the next level in their career
* Formal culinary qualification or equivalent professional training
* Strong leadership and team management skills
* Excellent knowledge of modern European cuisine and luxury dining standards
* Experience working with fresh, seasonal, and locally sourced Irish ingredients
* Sound understanding of food safety, HACCP, and allergen management
* Ability to perform under pressure in a fast-paced luxury environment
