Dromoland Castle Resort is seeking an experienced and motivatedAssistant Restaurant Managerto support the day-to-day leadership and operational excellence of our Food & Beverage offering within the Castle.This is a hands-on operational role, supporting multiple outlets and working closely with senior F&B leadership to deliver exceptional guest experiences, strong team engagement, and well-organised, efficient service operations.Key Operational Responsibilities:Provide hands-on management and floor leadership across multiple F&B outlets, including restaurants, bars, room service, private dining, and eventsEnsure all Food & Beverage outlets operate smoothly, consistently, and in line with agreed service standardsPlan and prepare for daily operations and events, including staffing levels, function sheets, and service requirementsManage effective rostering to meet business needs while controlling payroll and labour costsLead, motivate, and support the team to deliver high standards of service excellenceCreate a positive, professional, and engaging working environment aligned with the Dromoland Castle ManifestoImprove organisational structure, communication, and operational efficiency across the departmentPeople Leadership & Development:Lead and support F&B team members through coaching, training, and performance managementAssist with recruitment activities, including interviews for restaurant, room service, and bar teamsSupport onboarding, induction, and orientation of new team membersCoordinate training and development initiatives in partnership with HR and senior managementSupport performance reviews, probation assessments, development plans, and succession planningPromote a culture of learning, engagement, and career developmentAdministration & Systems:Support the development and implementation of the F&B strategic plan alongside senior managementManage and oversee Timepoint systems, including rostering, absence management, payroll accuracy, and reportingMonitor and address daily payroll or system anomaliesEnsure accurate reporting on labour, training, and departmental performanceGuest Experience & Quality Standards:Monitor and respond to guest feedback, sharing insights with the team and driving continuous improvementEnsure menus and service practices comply with all relevant legislation, including allergens and licensingDeliver consistently high standards of personalised guest care, professionalism, and hospitalityProfessional & Compliance Responsibilities:Uphold the values, ethos, and standards of Dromoland Castle Resort, Legend, and Preferred Hotels of the WorldEnsure compliance with company policies, employment legislation, and all Health & Safety, Fire Safety, Food Safety, HACCP, and licensing requirementsLead by example, demonstrating professionalism, respect, and pride in the Dromoland EstatePromote a strong safety culture and maintain a safe working environment at all timesThe Ideal Candidate:Previous experience in a supervisory or assistant management role within Food & Beverage or hospitalityStrong organisational, communication, and leadership skillsHands-on, service-focused approach with attention to detailConfident working with rostering, labour control, and operational systemsPassion for guest experience, team development, and high service standardsMust have the legal right to work and reside in IrelandThis role offers the opportunity to grow within a prestigious luxury resort environment, working alongside an experienced leadership team in one of Ireland's most iconic hospitality settings.Benefits:Full on-the-job trainingLeisure Centre MembershipPension scheme after 6 monthsWellness programmeCompetitive salaryDiscounted staff rates across Dromoland Castle and The INN at DromolandTraining OpportunitiesWork Authorisation:Applicants must have theunrestricted right to live and work in Ireland.
