Key Responsibilities: Oversee all kitchen operations, including quality control, menu development, and administrative tasks. Manage staffing levels and resources to meet the demands of a fast-paced, high-volume city centre venue. Lead the creation of seasonal menus and specials that align with our modern Irish gastro-pub ethos. Ensure compliance with food safety regulations, health & safety standards, and sustainability practices. Control costs while maintaining exceptional quality, optimizing gross profit margins, and meeting financial targets. Collaborate with the front-of-house team to communicate menu updates, promotions, and event offerings. Foster a positive, collaborative kitchen culture through strong communication and mentorship. Recruit, train, and develop a skilled kitchen team, conducting regular performance reviews. Address maintenance, hygiene, and equipment issues promptly to ensure seamless operations. Monitor food waste and implement strategies to minimize excess while maximizing efficiency. Stay ahead of culinary trends and customer preferences, regularly refreshing menus in partnership with the Operations Manager. Candidate Requirements: Minimum 3+ years of experience as a Head Chef in a high-end gastro-pub, restaurant, or boutique hotel. Proven ability to excel in a high-pressure, fast-paced environment while maintaining creativity and precision. Strong leadership skills with a talent for motivating teams and fostering a culture of excellence Track record of achieving financial targets, managing budgets, and reducing waste. Expertise in modern Irish cuisine, locally sourced ingredients, and contemporary cooking techniques. Full knowledge of HACCP, food safety regulations, and health & safety compliance, including a level III HACCP certification.
