We are currently seeking an experienced Assistant Food and Beverage Manager to join the team in Glasson Lakehouse.

Key areas:
Manage daily operations across all outlets
Oversee stock control, monthly counts, and reporting
Lead, train, and manage the F&B team
Ensure guest satisfaction and quality standards
Coordinate events and support menu development with the Head Chef
Oversee probation, performance, and compliance
Manage health & safety standards
Maintain F&B systems (Micros, Procure Wizard, Tenzo, Alkimii, EverGuest, Accounting)
Review monthly P&L and support departmental planning
Job Purpose
The Assistant Food and Beverage Manager supports the success of the hotel's F&B operations, working closely with the Operations Manager to ensure restaurants, bars, kitchens, and event spaces run to a high standard.
This hands-on leadership role combines operational oversight, team coordination, guest service, and administrative duties.
The ideal candidate is proactive, detail-oriented, and skilled in hospitality operations, cost control, compliance, and people management.
They also drive long-term success through performance reviews, team development, compliance audits, and financial reporting.
Key Deliverables
Operational Management
Lead daily operations across all F&B outlets, ensuring seamless service and high-quality standards.
Coordinate shift planning, floor coverage, and daily pre-service briefings.
Conduct walk-throughs to monitor cleanliness, service flow, and ambiance.
Support the kitchen and events teams to ensure smooth communication and execution during service.
Track key performance indicators such as table turn times, guest feedback, and service wait times using platforms like EverGuest and OpenTable.
Ensure daily handovers and shift reports are completed accurately and consistently.
Stock Management & Financial Performance
In the absence of the F&B Operations Manager or Bar Manager, help conduct stocktakes weekly or monthly as needed for the property.
If stocktakes are outsourced, provide support as required either by assisting with the count or preparing the necessary information in advance.
Monitor supplier performance and ensure all purchasing is completed via Procure Wizard.
Review GP performance and payroll spend, and support in identifying and correcting variances.
Assist in analysing weekly and monthly P&L reports using Alkimii and Micros.
Maintain full integrity of cash handling, credit card transactions, and delivery procedures in accordance with SOPs.
Team Leadership
Assist in the recruitment, onboarding, and training of the F&B team following SOPs and using Occupop.
Plan and monitor staff schedules to ensure adequate coverage and policy compliance, including accurate break logging in Alkimii.
Deliver regular performance feedback, hold team meetings, and contribute to quarterly Town Halls.
Conduct probationary reviews and support performance development plans.
Handle basic disciplinary actions and conflict resolution, escalating where necessary.
Foster a positive and collaborative team environment that promotes accountability and continuous improvement.
Actively engage on Workvivo and encourage staff participation in communications.
Guest Experience & Quality Control
Ensure a consistently high standard of guest service across all outlets.
Monitor guest satisfaction and implement improvements based on feedback gathered from EverGuest, OpenTable, and in-person observations.
Support the delivery of compliance and service excellence during regular operational audits.
Uphold brand standards and ensure strong teamwork during high-volume service periods.
Event Coordination
Assist in the planning and execution of internal and external events, liaising with Events and Kitchen teams.
Lead event service teams and ensure pre-event logistics are fully communicated and understood.
Verify accurate billing and prevent PM account build-up through regular checks.
Support post-event feedback capture and continuous improvement processes.
Preferred Experience
3-5 years' experience in food and beverage operations with at least 1 year in a supervisory or assistant manager role
Strong floor presence, with an ability to lead and support during peak service times
Experience with inventory systems, payroll budgeting, and financial reporting
Familiarity with hospitality systems: Micros, Procure Wizard, Alkimii, Tenzo, EverGuest, OpenTable
Strong communication, training, and team development skills
Sound knowledge of F&B compliance, food safety, and hygiene practices
Ability to work collaboratively across departments and adapt to a dynamic environment
Experience supporting the coordination of small to mid-size events
