JOB SUMMARY As a Conference & Banqueting Night Associate, you will be responsible for the overnight setup, breakdown, and resetting of all meeting rooms, event spaces, and banqueting areas to ensure they are prepared to the hotels five-star standards. Working largely unsupervised, you will play a key role in ensuring smooth event operations for the following day, maintaining high levels of presentation, cleanliness, and safety throughout the department. ____________________________________________________________________________________ CANDIDATE PROFILE EXPERIENCE Previous Food and Beverage experience in a 5* hotel environment is an advantage SKILLS AND KNOWLEDGE Excellent communication skills (verbal, listening, writing) Flexible approach to work Good time management and organisational skills EDUCATION OR CERTIFICATION Certificate in HACCP ______________________________________________________________________________________ BUSINESS RESULTS Balanced Scorecard Results: Supports and conducts activities to drive financial results, guest satisfaction, human capital index and market share. Operations:Assists in the daily operational duties of the Banquets department. Ensures compliance with Marriott Operating Standards to maintain brand integrity. Guest Satisfaction: Strives to meet or exceed customer expectations. Human Resources:Assists in maintaining the Marriott culture. Financial Management: Assists as needed in managing the Food and Beverage function operating budget and capital expenditure budget to achieve or exceed budget expectations. _______________________________________________________________________________________ TECHNICAL EXPERTISE (Learning and Applying Personal Expertise) The following are specific responsibilities and contributions critical to the successful performance of the position: OPERATIONS/PROPERTY MANAGEMENT Reads and understand Banquet Event Orders Sets tables in assigned area (or checks to make sure they have been set) correctly and uniformly, using clean pressed linen (no stains, rips and or tears), and cleans unspotted silver and glass, china with no chips or cracks, properly cleans and fills table complements (salt, pepper, sugar, breadsticks etc) Works safely and courteously at all times Knows menu for each function served and is able to explain the major ingredients and preparation methods for each item served. Keeps station neat and clean during service. Constantly patrols assigned station refilling water, coffee, or other beverage, removes service items and condiments per policies and procedures. Checks on the guests needs. Uses proper in-room clearing and serving techniques Returns all reusable table complements and condiments to be cleaned and refilled Sets up, serves and breaks down buffet or other special food service tables and equipment Sets up, serves and breaks down coffee breaks, receptions and other special events as assigned, following the standard policy and procedures Sets up and breaks down banquet bars as assigned, according to the policy and procedures Greets and serves guests, following the guidelines for Aggressive Hospitality and all other details of our policy and procedures regarding the service of food and beverage Follows all guest check and money-handling procedures when serving a la carte and beverage orders Completes and assigned side work such as refilling condiments, sorting linen, hanging /storing drapes, cleaning /storing serving equipment, etc Completes re-certification process for the floor, coffee breaks, and buffet set-up each year. Must receive a 90% or higher on the test for each of these areas. If the associate has failed to receive a 90% or higher, they will receive a record of conversation, be given the training book for the area of concentration with one week to complete it, and given extra one on one training in that concentration. After that week, the associate will be tested again. If the associate continues to fail, they will receive further disciplinary action Carries out all reasonable requests by management which the associate is capable of performing Complies with all current Marriott standard and local operating policies and procedures ____________________________________________________________________________________________ GUEST SATISFACTION Sets a positive example for guest relations. HUMAN RESOURCES Maintains superior relations with associates and responds to queries accurately and timely FINANCIAL MANAGEMENT Assists in the financial management of food and beverage function Understands the impact of food and beverage operation on the overall hotel OTHER Performs other duties as assigned to meet business needs. _____________________________________________________________________________________________ The hotel business functions seven days a week, 24 hours a day.All associates must realise this fact and always be aware that it may be necessary to move associates from their accustomed shift as business demands. A Manager may be required to work additional hours to meet the business needs. In addition, this is a hospitality business, and a hospitable service atmosphere must be projected at all times.
