This is a superb opportunity to join the hotel team of Anantara The Marker Dublin Hotel Food & Beverage Department as Assistant Director of Food & Beverage. Job Description

Management Responsibilities

* Maintain standards set by LHW (Leading Hotels of the World) and apply the Anantara Brand
* Demonstrate leadership and support department heads and colleagues
* Lead by example to create energised teams
* Inspire the team to provide world-class service and memorable guest experiences
* Drive engagement and develop team members
* Carry out departmental audits to ensure LQA standards are met
* Communicate the Hotel’s Vision & Mission to the team
* Work under pressure to meet guest and management expectations
* Maintain good financial awareness and control food and beverage costs
* Keep POS systems updated and menus accurate
* Perform month-end procedures as per policies
* Ensure cleanliness and maintenance of responsible areas
* Control ambience (lighting, music, temperature)
* Report defective materials and equipment
* Implement new initiatives within set timeframes
* Set and achieve personal objectives annually
* Attend meetings and maintain management presence
* Ensure high security standards
* Act on guest feedback promptly
* Monitor purchasing and costs, ensuring alignment with budgets
* Achieve departmental sales targets
* Maintain flexible work schedules for service continuity
* Support other hotel areas as needed
* Follow cash handling procedures and train team members accordingly
* Drive business results through revenue growth and cost efficiency


People

* Assist in recruitment and appraisal of F&B Managers
* Ensure team compliance with employee handbook
* Oversee Time Management System for managers and teams
* Manage holidays, bank holidays, and lieu time
* Conduct departmental briefings and meetings
* Ensure adherence to working hours legislation
* Maintain grooming standards
* Develop key team members and succession plans with HR
* Ensure team knowledge of LQA standards and high service quality


Specific Duties

* Support F&B departments operationally
* Assist in peak times and support outlets
* Adhere to purchasing and accounting procedures
* Carry out stock takes and address variances
* Forecast weekly payroll and ensure proper staffing
* Organize daily operations for business levels
* Conduct HACCP, Fire, and Health & Safety audits
* Ensure cash handling and credit policies are followed
* Review bookings and drive revenue during quieter periods
* Create upselling programmes
* Measure service and product quality according to LQA standards
