Dromoland Castle Hotel is currently seeking a passionate and enthusiastic Junior Sommelier to join our award-winning team. Set within the majestic surrounds of a 16th-century castle, this is a rare opportunity to build your sommelier career in one of Ireland's most luxurious and historic hotels, offering world-class hospitality across fine dining, elegant lounges, and prestigious events.
Overview of the Role:
As Junior Sommelier, you will support the Sommelier team in delivering a refined and memorable wine service across all dining experiences. This hands‑on role is ideal for someone with a genuine love for wine, eager to learn and grow within a Forbes Five‑Star standard environment. You will be involved in wine service, cellar organisation, and ongoing learning, all while developing your knowledge and guest service skills under the guidance of experienced sommeliers.
Key Responsibilities:
* Assist with wine service across our fine dining restaurant and lounges.
* Support the maintenance and organisation of the wine cellar and stockrooms.
* Learn about wine pairings, vintages, and producers in collaboration with the Head Sommelier.
* Deliver warm, professional, and informed service to enhance the guest experience.
* Participate in ongoing wine training and tastings.
* Uphold Dromoland Castles service standards in every guest interaction.
The Ideal Candidate:
* Some previous experience in food and beverage service, preferably in a luxury or fine dining environment.
* A keen interest in wine, with a desire to learn more about global regions and food pairings.
* Friendly and confident communicator with a passion for guest service.
* Organised, punctual, and eager to be part of a high-performing team.
* Positive, hands‑on attitude with a willingness to take direction and grow.
Note: WSET qualifications are a plus but not essential; full training will be provided.
