The ideal candidate combines technical expertise, creativity, and precision to produce consistent, visually appealing, and delicious products while maintaining the highest standards of food safety and quality.Key ResponsibilitiesPrepare and produce a wide range of chocolates and confectionery products (bonbons, pralines, ganache, truffles, caramels, nougats, pâte de fruits, etc.)Temper chocolate manually and/or using machinesDevelop new recipes, flavor combinations, and seasonal collectionsDecorate and finish products with attention to detail and presentationEnsure consistency in taste, texture, and appearanceManage ingredients, stock rotation, and raw material qualityMaintain a clean and organized workstation in compliance with food safety and hygiene standards (HACCP)Operate and maintain confectionery equipment and toolsCollaborate with the production team to meet daily and seasonal production targetsQualifications & Skills· Formal training or apprenticeship in chocolate, pastry, or confectionery (preferred)Proven experience as a Chocolatier and/or ConfiseurStrong knowledge of chocolate tempering, sugar work, and confectionery techniquesCreativity and a refined palateHigh level of precision, organization, and time managementAbility to work independently and as part of a teamPhysical stamina to stand for long periods and perform repetitive tasksPersonal AttributesPassion for chocolate and confectionery craftsmanshipAttention to detail and pride in product qualityReliable, disciplined, and motivatedWillingness to learn and experiment with new techniquesWorking ConditionsProduction kitchen or workshop environmentAssist with packaging, labeling, and quality controlEarly mornings, weekends, and peak seasonal periods may be requiredEligible to work in Ireland.Compensation & BenefitsA competitive package is offered, reflective of the responsibility of the role and the opportunity to help shape Ireland's most anticipated new luxury hotel.The Hawthorn By Galway Bay is an equal opportunity employer.
