FIRE Steakhouse & Bar and SOLE Seafood & Grill
Two of Dublin’s busiest and most prestigious restaurants are seeking a dynamic and commercially driven Head of Sales to lead and grow private dining, group, and event revenue across both venues.
This is a senior leadership role suited to an experienced hospitality sales professional who combines strategic thinking with hands‑on execution, and who thrives in a fast‑paced, high‑volume environment. You will be responsible for shaping the sales and reservations function, driving revenue growth, and leading a high‑performing team.
Location: Dublin City Centre
Salary: €70,000 package DOE (inc. base, KPI & bonus)
Key Responsibilities

Own and deliver the overall sales strategy for private dining, events, and group bookings across both venues
Drive proactive sales initiatives targeting corporate, luxury, and high‑value event business
Oversee and optimise the full sales cycle, from enquiry through to confirmation, execution, and final payment
Lead, mentor, and develop a Sales and Reservations team, ensuring high performance and conversion rates
Represent the restaurants at networking events and industry functions to generate new business opportunities
Analyse sales data and performance metrics to identify opportunities and maximise revenue
Maintain and optimise OpenTable and all booking channels, ensuring commercial effectiveness and accuracy
Collaborate closely with Operations and Culinary teams to ensure seamless delivery of premium guest experiences
Build and maintain strong relationships with key corporate clients, agencies, and high‑value repeat customers
Set, monitor, and exceed monthly and annual revenue targets

The Ideal Head of Sales

3+ years in a similar position
Proven track record in senior hospitality sales or commercial leadership, ideally within premium, high‑volume venues
Strong background in restaurant or venue management (highly advantageous)
Demonstrated ability to lead teams and drive revenue growth
Exceptional commercial acumen, negotiation, and closing skills
Experience with OpenTable would be an advantage
Strategic thinker with a hands‑on, results‑driven approach
Highly organised, proactive, and performance‑focused
