Sligo Department: Food Beverage Role Overview Markree Castle is seeking an experienced and passionate Assistant Restaurant / Dining Room Manager to support the daily operation of our fine-dining restaurant.
This role is ideal for a hospitality professional with strong supervisory skills, a commitment to exceptional guest service, and a genuine interest in training and developing team members while continually enhancing the overall dining experience.
Key Responsibilities Assist in the smooth day-to-day operation of the dining room, always ensuring the highest standards of service Lead, supervise, and motivate the restaurant team during service, acting as a visible and supportive presence on the floor Deliver a warm, professional, and memorable guest experience consistent with the standards of a luxury castle property Train, coach, and mentor team members, supporting skill development, confidence, and consistency in fine-dining service Support the onboarding of new staff and contribute to ongoing training initiatives Assist with staff scheduling, rota planning, and ensuring adequate staffing levels Handle guest feedback and resolve issues professionally and efficiently Ensure compliance with health safety, food safety, and service procedures Collaborate closely with the kitchen and wider food beverage team to ensure seamless service Contribute ideas to enhance and develop the restaurant experience, service flow, and guest satisfaction What we are looking for Proven experience in a fine-dining or high-end hospitality environment Previous supervisory or assistant management experience is essential Excellent customer service and interpersonal skills Strong leadership ability with a hands-on, positive approach Passion for hospitality and a keen eye for detail Interest in training, mentoring, and developing others Ability to remain calm and professional in a fast-paced environment Strong organisational and communication skills What we offer The opportunity to work in one of Ireland's most prestigious castle hotels A supportive management team and positive working environment Career development and progression opportunities Competitive remuneration based on experience Employee Assistance Programme
