Assistant Manager – Russells Seafood Bar, part of Fiddle + Bow Collection
Reports to: Director of Russells

What's the Role?
The Assistant Manager will act as the second-in-command, supporting the Director across operational, staffing, and service-related areas of the business.
This role is ideal for someone who is hands-on, organised, and passionate about delivering outstanding guest experiences.
The position involves managing daily operations, leading and developing the team, handling enquiries and bookings, and ensuring the highest standards of service and hospitality are consistently met.

Russells is a proudly local, well-regarded hospitality group in the heart of Doolin, part of The Fiddle + Bow Collection.
Our collection includes Russells Seafood Bar, Russells Takeaway (Russells Fish Shop and Coffee Shop), and The Rocket House, at Doolin pier.
Over the past four years, we have worked hard to build a strong reputation for warm service, high-quality food, and consistency—values that our local community recognises and recommends.
We are now seeking a reliable, operations-focused Assistant Manager to support the Director in the day-to-day running of Russells, with a specific emphasis on the Seafood Bar.
What does the role involve?
Key Responsibilities
Operational Leadership
Assist in the day-to-day management of Russells Seafood Bar, ensuring smooth and efficient operations.
Maintain high standards of cleanliness, presentation, and operational excellence throughout the venue.
Oversee checklists, procedures, and daily standards to ensure consistency across all service periods.
Support other Russells outlets as required, providing leadership and operational presence.
Team Management & Staffing
Create weekly staff rosters that balance labour efficiency with service needs.
Assist in recruiting and onboarding new team members, particularly for seasonal peaks.
Train staff in all practical aspects of their roles, including service standards, workflow, and operational procedures.
Lead by example, fostering a positive and motivated team culture.
Customer Service Excellence
Uphold and promote Russells' strong reputation for warm, attentive, and friendly customer service.
Ensure all team members deliver service that reflects our values and maintains the trust locals have in us.
Address customer queries and concerns promptly and professionally.
Support a welcoming environment where guests—locals and visitors alike—feel valued and well cared for.
Administration & Communication
Manage email enquiries and respond promptly and professionally.
Handle group booking requests and coordinate details with the team and kitchen.
Assist the Director with administrative tasks, including basic reporting, scheduling, and supplier communication.
Skills & Experience
Previous experience in a supervisory or assistant management role in hospitality.
Strong operational understanding of restaurant/bar service.
Excellent people-management skills with the ability to train, guide, and motivate staff.
High level of organisation, communication, and attention to detail.
A natural commitment to delivering excellent customer service.
Ability to work calmly and confidently in a busy, fast-paced environment.
