Ryan's Traditional Fish & Chips is an award-winning, fast-growing food business in the heart of Ennis. Known for our high standards, quality ingredients, and classic Irish chipper done right, we've built a reputation we're proud of — including multiple national food awards.
We are now looking for an experienced Kitchen Manager to take ownership of the kitchen and play a key role in the next stage of our growth.
This is a hands-on leadership role for someone who takes pride in food, runs a tight kitchen, and enjoys leading a team in a busy, successful operation.
The Role
As Kitchen Manager, you will be responsible for the day-to-day running of the kitchen, maintaining our award-winning standards while driving consistency, efficiency, and team performance.
Key Responsibilities:
* Oversee all kitchen operations in a high-volume environment
* Lead, train, and motivate kitchen staff
* Maintain exceptional food quality, portion control, and presentation
* Ensure HACCP, food safety, and cleanliness standards are always met
* Manage stock control, ordering, waste reduction, and margins
* Work closely with the owner and front-of-house team to deliver a great customer experience
* Take pride in running a professional, well-organised kitchen
What We're Looking For
* Previous experience as a Kitchen Manager, Head Cook, or Senior Chef (chipper or fast-paced kitchen experience is a big advantage)
* Strong leadership and people-management skills
* High standards and attention to detail
* Calm, organised, and reliable under pressure
* A positive attitude and pride in your work
