Overview
Avoca Ireland is seeking a Head Chef for our Fernhouse Restaurant in Kilmacanogue. Avoca operates 13 locations across the country and values its time-honoured traditions while looking to the future. As Head Chef you will be responsible for running all aspects of your designated kitchen in a permanent, full-time capacity.
Responsibilities
* Support the Culinary Director in delivering consistently high-quality food to Avoca customers.
* Keep up to date with new products, recipes, preparation techniques and HACCP requirements.
* Maintain all health and safety standards and food management systems (HACCP).
* Apply knowledge of all procedures and policies pertaining to food preparation, allergens, receiving products, storage and sanitation.
* Manage all kitchen team members, including personnel administration, rostering, supervision of junior chefs, timekeeping, holiday requests, working time legislation requirements and performance management.
* Control the kitchen labour budget and food production targets.
* Ensure stock is properly rotated, products are ordered in time from our various suppliers, with attention paid to stock levels.

* Proven track record of managing a kitchen.
* Superior standards of hygiene and cleanliness.
* Attention to detail and problem-solving skills.
* Reliable and flexible in their approach to work.
* Previous experience in a similar role an advantage.
