Restaurant Manager The Peligoni Club, Zakynthos Greece Immediate Start Early November 2025 We are looking for a dedicated and experienced Restaurant Manager to take the helm at Mikro Nisi, a beautiful beachfront restaurant that is part of the Peligoni family. This is a hands-on, dynamic role that requires a passionate leader to oversee the day-to-day operations, work closely with the Head Chef to deliver an exceptional guest experience, and manage a team with a range of experience levels. Reporting to the F&B Manager, the Restaurant Manager will ensure every service runs smoothly while upholding our high standards of quality and hospitality. Key Responsibilities Oversee the day-to-day operation of Mikro Nisi, ensuring every service runs smoothly and efficiently Act as MaitreD during service, creating a warm and welcoming environment for all guests Work closely with the Head Chef to coordinate daily specials and adapt menus to guest preferences and seasonal needs Maintain high levels of cleanliness and hygiene across both front and back of house areas Lead pre-service briefings to ensure the team is well-informed on menu changes, special requests, and daily priorities Manage table reservations and optimise capacity Ensure consistently high standards in food quality, service, and presentation Resolve guest concerns promptly and professionally, with a calm and solutions-focused approach Support, train, and develop your team to ensure they are motivated and capable, regardless of experience level Collaborate with the F&B Manager to monitor labour costs, manage rotas, and ensure appropriate staffing levels Drive team performance and encourage upselling to meet weekly targets Monitor stock levels and assist with ordering and stock control Handle billing and cashing up procedures accurately and efficiently Keyholder responsibilities Essential Requirements Proven experience in restaurant management, ideally within a fast-paced, service-led environment Strong leadership skills with the ability to motivate and guide a team with varying levels of experience Hands-on, calm under pressure, and a natural problem-solver Exceptional communication and interpersonal skills Deep understanding of food and beverage service, with high attention to detail Experience using EPOS systems and managing rotas and stock Passionate about hospitality and delivering a memorable guest experience Available for immediate start through early November 2025 Skills: Leadership F&B People Skills Hospitality Service Delivery Benefits: Housing Allowance / Accommodation Travel Allowance Gym Meal Allowance / Canteen
