The Role:
The role of the Chef de Partie is to assist with the efficient operation of the kitchen service, producing high-quality food within budget and ensuring compliance with all food hygiene regulations.
Assist the Head Chef in managing the Kitchen, maintaining standards, training staff, and ensuring a safe, hygienic environment. Prepare daily food items according to business needs across all outlets.
Reporting To: The Chef de Partie reports daily to the Head Chef and Sous Chef.
The Person: We seek candidates with proven culinary experience capable of managing their own shift from start to finish.
The Hotel: Lough Rea Hotel and Spa, located near Loughrea, Galway, offers panoramic views, a rooftop bar, spa, conference facilities, and is part of the S Hotel Group, offering career growth opportunities.
Main Responsibilities:
1. Check daily function sheets, ensure mis-en-place is prepared, and ingredients are ordered.
2. Prepare and present food to company standards, maintaining correct portion control and cost efficiency.
3. Monitor purchase costs and manage stock levels through regular stock takes.
4. Coordinate training for kitchen staff and apprentices, assist in menu and recipe development, and ensure high cooking standards.
5. Maintain equipment and ensure all food leaving the kitchen meets quality standards.
Food Quality:
1. Create and test dishes that meet company standards.
2. Ensure consistency in food presentation, portions, and quality daily.
3. Inspect incoming fresh food for quality.
4. Ensure timely and coordinated food preparation and delivery.
5. Maintain all legal standards, including HACCP, and keep records up to date.
The Ideal Candidate:
1. Proven experience as a Chef, preferably in a hotel setting.
2. Excellent communication skills and up-to-date culinary knowledge.
