Duties and Responsibilities of the Role:
* Assist the Banqueting Head Chef in overseeing day-to-day operations of the banqueting kitchen, ensuring consistent high standards for conferences, weddings, and corporate events.
* Work closely with the Conference & Banqueting operations team to ensure smooth service delivery.
* Support menu development and event-specific dishes in line with client requirements and hotel standards.
* Ensure all food is prepared, cooked, and presented to a consistently high standard, even at high volume.
* Monitor stock, assist with ordering, and maintain cost controls through portion management and waste reduction.
* Ensure compliance with HACCP, food hygiene, and safety regulations at all times.
* Train and mentor junior team members, supporting skills development and career growth.
* Collaborate with the Food & Beverage team to ensure guest expectations are exceeded.
Requirements for the role:
* Previous experience in a 4- or 5-star hotel or high-volume luxury event catering environment.
* Strong background in large-scale banqueting, weddings, and conference catering.
* Excellent organisational and time management skills, with the ability to handle multiple events simultaneously.
* Strong leadership skills with the ability to mentor and motivate a diverse team.
* In-depth knowledge of HACCP and food safety legislation.
* Ability to work well under pressure while maintaining attention to detail and luxury standards.
* Flexible approach to working hours, including evenings, weekends, and holidays.
