We are recruiting for a talented and motivated Chef de Partie - Pastry to join the culinary team at our luxury hotel. This is a full-time position, ideal for someone with previous experience in a four or five-star hotel or fine dining environment. You should be able to effectively work as part of a fast-paced team and have excellent communication and organisational skills. You will report directly to the Executive Head Chef.
Location: Cong, Co. Mayo
Employment type: Full Time
Working pattern: 5 Days over 7 Days (including some weekends and Bank Holidays)
Key Responsibilities of Pastry Chef de Partie
Set up and run the pastry section efficiently and independently.
Assist the senior chef in the day-to-day pastry operations.
Prepare and present high-quality desserts for à la carte, banqueting, and afternoon tea service.
Ensure consistency and quality across all pastry offerings.
Train and mentor junior pastry staff, sharing skills and supporting development.
Maintain impeccable standards of cleanliness and organisation on your section.
Conduct ordering and stock rotation for your area of responsibility.
Always uphold food safety and hygiene standards.
What are we looking for?
Proven experience in pastry and dessert preparation in a fine dining or luxury hotel environment
Strong knowledge of classical and contemporary pastry techniques
Creativity and attention to detail in presentation and flavour
The ability to work efficiently under pressure while maintaining high standards
Excellent time management and clean, organised work habits
A collaborative attitude with the ability to work both independently and as part of a team
Commitment to food safety, hygiene regulations, and allergen awareness
A genuine passion for pastry and delighting guests through beautiful and innovative desserts
