Sales & Reservations Manager for - FIRE Steakhouse & SOLE Seafood & Grill – DublinReporting to:Director of Sales & MarketingRole start date – January 2026.Role OverviewThe Group Sales & Reservations Manager will play a pivotal role in driving revenue, managing demand, and maximising covers across two of Dublin's busiest and most prestigious restaurants - FIRE Steakhouse & Bar and SOLE Seafood & Grill.This is a hands-on management role combining strategic sales activity with day-to-day reservations management, team development, and relationship building across the luxury, corporate, and private dining markets.Key ResponsibilitiesSales & Revenue PerformanceDrive proactive sales activity to generate new business and grow existing accounts across both restaurantsEnsure weekly and monthly revenue and cover forecasts are achievedAnalyze sales performance including cover trends, conversion rates, lead times, and year-on-year comparisonsPrepare and present monthly and ad-hoc sales performance reportsConduct competitor and market analysis to inform pricing, forecasting, and sales strategyMaintain a strong awareness of domestic and international market trendsGroup Sales & Private DiningManage and develop relationships with luxury travel agents, DMCs, corporate clients, and key partnersActively drive private dining and group bookings across FIRE and SOLERepresent FIRE & SOLE at networking events and industry functions, establishing key relationships in line with the company's sales strategyProvide timely, accurate, and competitive quotes for all group and private dining enquiries, maintaining maximum profitability in line with brand pricing structuresManage the full sales cycle: enquiries, quoting, follow-up, site visits, confirmations, invoicing, deposits, and final paymentsWork closely with Operations and Culinary teams to deliver bespoke menus and tailored event experiences if requiredReservations Strategy & SystemsOversee all availability planning, table plans, floor plans, special dates, tags, and configuration on OpenTable for both restaurantsEnsure correct pacing, timings, and booking controls are implemented to maximise revenue and guest experienceMonitor and optimise reservations strategy across peak and off-peak trading periodsTeam Leadership & DevelopmentLead, manage, and support the Sales & Reservations team across both restaurantsProvide ongoing training, coaching, and development to new and existing team membersSupport the team with time management, workload planning, and sales best practicesConduct regular one-to-one meetings, performance reviews, and coaching sessionsRoster the Sales & Reservations team, ensuring full coverage across all required shiftsCommunication & CollaborationWork closely with the Director of Sales & Marketing and the wider Sales & Marketing team to develop and implement sales strategies as a teamAttend all internal sales meetings, performance reviews, and relevant operational or communication meetingsMaintain clear, consistent communication with Operations and Culinary teams to ensure seamless delivery of group bookings and eventsKey Skills & ExperienceMinimum 2+ years in a Sales & Reservations role within a high-volume, premium hospitality environment is essentialPrior experience managing a team of 5+ and/or strong leadership skills is essentialStrong understanding of group sales, private dining, and corporate business in the Dublin marketExperience using OpenTable or similar reservations platformsExcellent organisational, analytical, and forecasting skillsStrong leadership and people management capabilitiesConfident communicator with the ability to build long-term client relationshipsCommercially driven with a hands-on, solutions-focused approachA fiercely proactive and can-do attitudeSalary - €45,000 plus KPI and other benefits
