Job Specification Position: Sous Chef Location: South Dublin Area (4-Star Hotel) Employment Type: Full-Time, Permanent Department: Kitchen Reports To: Head Chef Salary: €45,000.00 Overview Our client, a well-established 4-star hotel and member of a renowned Irish hospitality group, is currently seeking a passionate and experienced Sous Chef to join their dynamic kitchen team. Role Summary As Sous Chef, you will support the Head Chef in delivering high-quality food and service while supervising the kitchen team. You'll play a key role in menu development, food preparation, hygiene compliance, and team training. Key Responsibilities Supervise kitchen staff in the absence of the Head Chef Oversee preparation, presentation, and quality control of all food in designated areas Implement and monitor HACCP procedures, ensuring compliance and documentation Uphold and improve high culinary standards in line with company expectations Assist in menu planning, costing, and development of seasonal offerings Support recruitment, onboarding, and ongoing training of kitchen staff Create and maintain departmental SOPs and ensure consistent implementation Delegate daily kitchen tasks effectively to maximise output and efficiency Liaise with suppliers and manage ordering of food and stock levels Ensure kitchen operates in compliance with health and safety regulations Be aware of daily business levels and collaborate with other departments Candidate Requirements Minimum 2 years' experience as Sous Chef or in a similar senior kitchen role, preferably in a 4-star hotel setting HACCP trained with a strong understanding of food safety standards Proven ability to lead and motivate a team in a high-pressure environment Strong culinary skills and passion for quality and innovation Professional appearance and excellent work ethic Flexibility to work varying shifts, including evenings and weekends What's on Offer Recognition as one of the Best Places to Work in Hospitality 2024 Supportive and inclusive team environment that values staff development Ongoing training and career progression opportunities Contributory company pension scheme (after 12 months of service) Company life insurance Free parking on site Complimentary gym membership Staff meals provided during shifts Friends & family hotel rates across the hotel group Skills: Culinary Excellence Team Leadership Menu Development Food Safety & HACCP Compliance Stock & Cost Control Service Delivery Collaboration & Communication
