The Role
As the new Head of Kitchen / Senior Sous Chef, you will be the hands-on leader of the culinary brigade. Reporting to and working in partnership with the hotel's highly respected, long-serving Executive Chef, you will be responsible for:
* Leading the team during service, running the pass, and ensuring a smooth, efficient operation.
* Training, mentoring, and developing the junior chefs in the brigade.
* Maintaining the highest standards of food quality, presentation, and kitchen hygiene.
* Contributing your creativity to menu development with a focus on fantastic local Mayo produce.
This is a role for a chef who loves being in the heat of the kitchen, leading from the front, and inspiring a team to create exceptional food.
Who We're Looking For
We\'re looking for a skilled culinary professional, likely a seasoned Sous Chef ready for a significant step up, or an existing Head Chef from a smaller operation looking for a new challenge. The ideal candidate is:
* A calm, confident, and professional leader. You guide and teach, you don\'t shout.
* A team player who can respect and integrate into an established, loyal brigade.
* Someone with a strong background in quality hotel or brasserie dining.
* A low-ego, high-skill individual who is keen to learn from a veteran Executive Chef while running the daily operations.
