An Executive Head Chef will build a reputation for the hotel by maintaining a talented and creative kitchen brigade, offering an innovative menu, and delivering an exceptional culinary experience.
What will I be doing?
* Lead the kitchen brigade and ensure ongoing development of team members
* Identify effective approaches to succession planning
* Create menus that meet and exceed customer needs and conform to brand standards
* Ensure the consistent production of high-quality food across all hotel food outlets
* Develop positive customer relations through proactive interaction with guests, team members, contractors, and suppliers
* Promptly and completely resolve any issues in the kitchen or related areas among guests and team members
* Manage department operations, including budgeting, forecasting, resource planning, and waste management
* Oversee all aspects of the kitchen, including operational, quality, and administrative functions
* Seek regular verbal feedback from customers and respond promptly to guest queries
* Ensure adequate resources are available based on business needs
* Manage food provision to outlets, ensuring compliance with legislation
* Control costs to improve gross profit margins and meet financial targets
* Keep team members updated on menu items, promotions, functions, and events
* Maintain good communication and work relationships across hotel departments
* Ensure staffing levels meet business demands
* Conduct monthly communication meetings and generate minutes
* Manage staff performance issues following company policies
* Recruit, train, and develop the kitchen team
* Comply with security, fire regulations, health and safety, and food safety legislation
* Address maintenance, hygiene, and hazard issues promptly
* Manage financial performance aligned with hotel objectives
* Adhere to food control systems to maintain margins
* Review menus regularly with the Food and Beverage manager to stay aligned with market trends
* Be environmentally conscious
* Ensure food wastage programs are followed to meet margins
* Prepare and maintain monthly staff schedules according to local legislation
What are we looking for?
* Relevant experience as an Executive Chef or high-performing Sous Chef in a first-class property
* Excellent leadership skills
* Creative approach to producing high-quality food
* Business-focused management of a hotel kitchen
* Ability to build internal and external relationships
* Strong planning and organizational skills
* Ability to multitask and meet deadlines
* Current, valid trade qualification (proof may be required)
Additional advantageous capabilities include:
