Job Title: Senior Culinary Leader
The ideal candidate will have a proven track record of success in kitchen management, with a strong focus on team leadership, menu development, and customer satisfaction.
Main Responsibilities:
1. Support the Head Chef: Collaborate with the Head Chef to drive kitchen operations, ensuring seamless service delivery and high-quality standards are met across all outlets.
2. Culinary Leadership: Lead, train, motivate, and support the Chef de Partie and Commis team to achieve exceptional culinary results.
3. Menu Development: Assist in planning and developing menus, recipes, and daily/weekly specials in collaboration with the Head Chef.
4. Quality Control: Ensure all dishes meet high standards of presentation, taste, and consistency across all outlets.
5. Regulatory Compliance: Monitor and enforce compliance with HACCP, food safety, and hygiene regulations.
6. Kitchen Maintenance: Ensure all food storage, preparation, and service areas are clean, organised, and compliant with standards.
7. Food Cost Management: Contribute to food cost control, portioning, and waste-reduction initiatives.
8. Supply Chain Management: Assist the Head Chef with ordering, supplier management, and checking the quality and accuracy of deliveries.
9. Inventory Control: Support stock management, monthly stocktakes, and inventory processes.
10. Staff Wellbeing: Oversee and support the preparation and quality of staff meals and the staff canteen.
11. Talent Acquisition and Development: Participate in recruitment, training, onboarding, and performance reviews as part of the kitchen management team.
12. Risk Management: Ensure all Health & Safety, Fire, Licensing, and Employment regulations are followed.
