The Role
We're seeking an experienced operational Food & Beverage Manager to join our senior management team. This is a key leadership position reporting directly to the General Manager. You'll be responsible for driving our F&B operations to new levels while maintaining the quality, warmth, and professionalism our guests expect. Your role is to lead, develop, and inspire a talented team while delivering exceptional service and maintaining the highest standards.
Key Responsibilities
Leadership & Team Development
· Lead, develop, engage and inspire the F&B team – including floor staff and bar staff.
· Deliver rostering and training programmes that build capability and create a strong team culture
· Demonstrate strong interpersonal skills, supporting colleagues through any situation with resilience and empathy
· Foster a culture of continuous learning and elevation within the team
Service & Guest Experience
· Deliver exceptional customer service, setting the standard through your own knowledge and conduct
· Ensure every guest receives warm, professional, and attentive service reflective of our Schoolhouse values
· Monitor and drive positive guest feedback across all platforms (TripAdvisor, Google, OpenTable)
· Address guest concerns promptly and professionally
Operational Management
· Manage day-to-day F&B operations, including service coordination and workflow
· Maintain high standards of cleanliness and hygiene throughout service areas and back-of-house
· Oversee stock takes, ordering, and deliveries – managing costs and inventory effectively
· Manage budgets and contribute to revenue targets
Compliance & Licensing
· Ensure full compliance with Irish employment law, food safety regulations, and health & safety requirements
· Demonstrate working knowledge of licensing laws, weights and measures, and regulatory requirements
· Properly manage tips and gratuities in accordance with the Payment of Wages Amendment (Tips and Gratuities) Act 2022
· Maintain management records and performance reporting
Communication & Collaboration
· Communicate clearly with kitchen management, front office, events and housekeeping teams
· Participate, drive and engage in management meetings and hotel-wide initiatives
· Hands on operational involvement is essential. You will lead by example, not by your words
What We're Looking For
Essential Experience:
· Minimum 3 years' experience as a F&B Manager, Assistant Manager or Restaurant Supervisor in a high-end, busy GastroBar, or fine dining environment
· Proven track record in leading and developing teams
· Strong knowledge of food safety and health & safety legislation
· Understanding of basic HR employment legislation and compliance requirements
Desirable Skills & Experience
· Familiarity with F&B management systems (e.g., OpenTable, Volante, Timepoint and HR systems)
· Experience with stock control systems and cost management
· Working knowledge of licensing laws and regulatory compliance
· Events management experience in a hospitality setting

Employment Terms
Position Type: Full-time, permanent
Hours: Flexible, including evenings, weekends, and bank holidays. Typical schedule will be Thursday to Wednesday with variation according to business needs. Exact hours to be agreed during onboarding.
Probation: 6-month probationary period
