Location: County Wicklow (Brittas Area), Ireland

Role Overview
Join a dynamic kitchen team as a Chef de Partie, splitting your time between an elegant dining service and a mobile catering unit for private events, weddings, and corporate functions. Refine your culinary skills, shape menus, and mentor junior staff in a hands-on environment.

Key Responsibilities

* **Station Management**: Oversee one or more sections (meat, fish, sauces, sauté) to ensure consistent portioning, quality, and presentation.
* **Mobile Catering**: Lead prep and service for off-site events—managing mise-en-place, cooking in a mobile kitchen setup, and tailoring menus to client needs.
* **Menu Development**: Partner with the Head Chef to source seasonal, local ingredients, cost recipes, and launch daily specials.
* **Team Leadership**: Mentor Commis Chefs and kitchen porters, delegate tasks, and maintain high hygiene and safety standards (HACCP).
* **Quality Control**: Conduct temperature checks, daily stock inventories, and uphold food safety compliance.
* **Service Support**: Assist Front of House during peak hours to ensure efficient ticket flow and plating.

Job Requirements:

About You

* **Experience**: 2–3 years in a fast-paced professional kitchen, with both à la carte and large-scale catering exposure.
* **Technical Skills**: Knife work, sauce making, basic butchery, and comfort with classical and modern techniques.
* **Personal Qualities**: Creative flair, calm under pressure, strong communicator, and team player.
* **Qualifications**: Culinary diploma or equivalent, with up-to-date food safety certification.
* **Flexibility**: Available for evenings, weekends, and occasional bank holidays for off-site support.
