We currently have an exciting position for a head chef here in our 5 Star Lyrath Estate Hotel.
Under the general guidance of the General Manager you will provide the highest food quality consistent with cost control and profitability margins of the hotel's kitchen to maximise guest satisfaction and food profitability while managing the food production and staff in the kitchen.
MANAGE FOOD PRODUCTION AND PROVIDE THE HIGHEST FOOD QUALITY Manage all activities in the kitchen, including production, ordering and management of kitchen staff Maximise guest satisfaction by providing the highest food quality consistent with cost control and profitability margins of the hotel kitchen Assures adherence to Cusack Hotel standards of food quality, preparation, recipes, and presentation.
Assures proper staffing and adequate supplies for all stations.
Overseas all food production.
Co-Ordinates activities and communicates priorities to ensure correct preparation and delivery time to provide food for functions, restaurants breakfast To ensure SOPs for all dishes are set and implemented.
Controls and orders food supplies.
Controls all dry storage items required by the kitchen and related departments to ensure correct quality and stock.
Co-Ordinates operation of kitchen with other food and beverage departments.
Ensures readiness and compliance in case of last-minute changes to reservations.
Ensures that prices and portions are offered in accordance with food and beverages profit objectives.
To forecast and plan busy periods of business in order to ensure the smooth run Ensures the kitchen is run in compliance with all regulations as laid down by the Health Board and HACCP regulations.
Hygiene control - ensure all cleaning schedule and records are set and maintained.
Carry out regular hygiene audits.
Compile the rostering of all wash-up, kitchen porters and other kitchen staff, as well as planning all holiday requirements for the department.
Carry out training Previous experience in a similar role in a busy hotel kitchen Experience with HACCP Ability to work well under pressure and as part of a team Be flexible, adaptable and be able to demonstrate innovation Be willing to work in a team environment to achieve a common goal.
