Demonstrated ability to manage and mentor a kitchen brigade, fostering a positive and productive work environment. Strong background in designing creative, seasonal menus that appeal to both casual diners and event guests (e.g. weddings, private dining). Solid grasp of kitchen financials including GP%, stock rotation, waste management, and supplier negotiation. Experience in delivering high-quality food at scale for weddings, banquets, and private events. Flexibility to work evenings, weekends, and event days as needed Full legal right to work in Ireland (valid work permit or EU passport) Responsibilities of the Head Chef role Oversee the day-to-day running of the kitchen, ensuring smooth service across all food areas Manage and lead the kitchen team, including rotas, training, and performance Plan and deliver seasonal menus for the bar, restaurant, weddings, and private events Maintain high food quality and presentation standards at all times Order stock, manage suppliers, and keep food costs within budget Ensure full compliance with HACCP and food safety regulations Work with management to develop menus and support events Handle kitchen admin, including temperature logs, allergen tracking, and cleaning schedules Take part in tastings, menu planning, and kitchen meetings Be hands-on during busy services and functions If you're excited about this opportunity and believe you have the skills required, we'd love to hear from you!
