Job Overview
Senior Sous Chef – Career Vision Recruiters Hospitality & Dental – up for selection at Imperial Hotel, Cork City. The role requires a self‑motivated, experienced leader with extensive high‑volume kitchen exposure. The candidate must be a natural leader, management of a cost‑effective kitchen, and able to collaborate with the front and back team.
Responsibilities
* Assist the head chef in the professional running of the kitchen and other food outlets in an efficient and cost‑oriented manner. This includes purchasing, planning, budgeting.
* Plan, direct, and supervise food preparation and cooking.
* Manage all food areas and work hands‑on with the team.
* Prepare the daily mise‑en‑place with the assigned team in a timely and efficient manner.
* Work with the front and back of house team to achieve required production and guest satisfaction.
* Create recipes and cost them in conjunction with the head chef.
* Remain in constant contact with the head chef or, in his absence, with the proprietor and immediately advise of any changes or problems.
* Plan for forthcoming meal periods in advance.
* Work toward achieving target cost levels of food, labour and other material within the kitchen operation.
* Achieve and established SOPs.

* Understanding of food margin, cost control and how to achieve the same.
* Ability to train and be a good example for the team.
